Ingredients:- 

❤ One pound (450g) of spaghetti (you can substitute gluten-free or whole-wheat spaghetti if you want).
❤ Two tsp olive oil.
❤ Three minced garlic cloves.
❤ One onion, chopped finely.
❤ One chopped bell pepper.
❤ One diced zucchini and one cup of sliced mushrooms.
❤ One cup of chopped cherry tomatoes and one can (14 oz) chopped tomatoes.
❤ One tsp of dried basil.
❤ One tsp of dehydrated oregano.
❤ To taste, add salt and pepper.
❤ Grated Parmesan cheese (for serving only, optional).
❤ Chop some fresh basil leaves (optional for garnish).

Instructions:-
  1. Cook the pasta until al dente, following the directions on the package. After draining, set away.
  2. Heat the olive oil in a big skillet over medium heat. Add the chopped onion and minced garlic, and sauté for two to three minutes, or until the onion is transparent and fragrant.
  3. To the skillet, add the chopped bell pepper, cherry tomatoes, mushrooms, and zucchini. Cook for 5 to 7 minutes, stirring periodically, or until the vegetables are soft but still somewhat crunchy.
  4. Add the diced tomatoes from the can and season with oregano and dried basil. To taste, add salt and pepper for seasoning. Allow the sauce to boil for an additional five minutes after thoroughly stirring to allow the flavors to mingle.
  5. When the vegetable sauce is in the skillet, add the cooked spaghetti. Mix everything together until the sauce and veggies are evenly distributed over the spaghetti.
  6. If preferred, top with chopped fresh basil leaves and grated Parmesan cheese and serve hot.
